THAI DANCER Sticky Caramel Chicken Drumsticks Recipe

For the Chicken Marinate:

  • 4 pcs chicken thigh 
  • 1 egg beaten
  • 1 tbsp plain flour
  • 1 tbsp cornstarch
  • salt
  • 1/2 tsp coarse black pepper
  • Oil for frying

For the Sauce:

  • 3 cloves garlic – minced
  • 1 tbsp minced ginger
  • 1 tbsp Thai Dancer Oriental fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp Thai Dancer Sriracha chili sauce
  • 1 / 4 cup (60ml) honey
  • 2 tbsp. cooking oil
  • As needed toasted sesame seeds for garnish

Procedure:

  1.       Season chicken with salt and pepper, marinate for 30 minutes.
  2.       Add egg, four and cornstarch and mix until well combined. 
  3.       Deep fry chicken in pre-heated oil for 13-15 minutes until cooked and golden.
  4.       Heat 2 tbsps. of oil in wok, stir fry ginger and garlic. Add all sauces and honey. 
  5.       Stir over low heat and let the mixture boil. 
  6.       Add in fried chicken pieces and mix thoroughly until the chicken coats well with the sauce. Leave for few minutes and turn off heat.

* Sprinkle some toasted sesame over the chicken before serving.
