Kansui powder is an essential ingredient for making ramen noodles. It is effective in making the noodles with a perfect balance of texture, firmness which prevent them from becoming too soft after cooking without affecting its flavour. Used in variety of noodle recipes such as Chinese dry noodles, yakisoba, plate udon and nagasaki champon.
